  • 1.5 pounds flank or skirt steak
  • 2-3 chipotle peppers in adobo sauce (chopped)
  • 2 tablespoons adobo sauce (from the chipotle peppers)
  • 2 tablespoons olive oil
  • Juice of 2 limes
  • 3 cloves garlic (minced)
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • For the Cilantro-Lime Rice:
  • 2 cups cooked white or brown rice
  • Juice of 1 lime
  • 1/2 cup chopped fresh cilantro
  • Salt to taste
  • For the Black Beans:
  • 1 can (15 oz) black beans (drained and rinsed)
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • Salt to taste
  • Toppings:
  • 1 cup pico de gallo (store-bought or homemade)
  • 1 cup guacamole (store-bought or homemade)
  • 1 cup shredded cheese (cheddar or Monterey Jack)
  • 1 cup sour cream or Greek yogurt
  • 2 cups shredded lettuce
  • Optional: sliced jalapeƱos, diced avocado, and chopped green onions

Instructions

  • 1. Marinate the Steak:
  • In a bowl, combine the chopped chipotle peppers, adobo sauce, olive oil, lime juice, minced garlic, cumin, oregano, salt, and pepper.
  • Add the steak to the marinade, ensuring it's well-coated. Cover and refrigerate for at least 30 minutes, preferably 2-4 hours or overnight for maximum flavor.
  • 2. Cook the Rice:
  • Prepare the rice according to package instructions. Once cooked, fluff with a fork and stir in lime juice, chopped cilantro, and salt to taste. Set aside.
  • 3. Prepare the Black Beans:
  • In a small saucepan, combine the black beans, cumin, garlic powder, and salt. Heat over medium until warmed through, stirring occasionally.
  • 4. Cook the Steak:
  • Preheat a grill or cast-iron skillet over medium-high heat. Remove the steak from the marinade, allowing excess marinade to drip off.
  • Grill or sear the steak for about 4-5 minutes on each side for medium-rare, or longer if desired. Let it rest for 5-10 minutes before slicing it thinly against the grain.
  • 5. Assemble the Burrito Bowls:
  • In each bowl, start with a base of cilantro-lime rice. Top with sliced steak, black beans, pico de gallo, guacamole, shredded cheese, sour cream, and shredded lettuce.
  • Add any additional toppings as desired.
  • 6. Serve:
  • Serve the burrito bowls immediately, allowing everyone to customize their own with extra toppings or hot sauce if desired.
  • Enjoy!
